5-spice powder is a traditional Chinese spice blend. The name 5-spice is a bit misleading. While it is often a mixture of star anise, fennel seeds, cloves, cinnamon and Szechuan peppercorns (the usual ingredients), the number of constituents of the 5-spice powder varies from region to region, and often times exceed 5. It is very pungent and should be used sparingly.Originally concocted for medicinal use, it was later adopted by the Chinese kitchen. Now it is an integral part of Chinese cuisine, especially in southern China. |
