Chinese sponge cake

Servings: 3-4

8 eggs
3 cups flour
2 cups sugar
1 ½ cups milk
1 Tablespoon baking powder
1 cup shortning
1 piece parchment paper
¼ teaspoon vanilla extract

Directions:

  1. Beat (or blend) the eggs until it's very stiff (about 5 minutes).
  2. Add the sugar and beat (or blend) it again for 10 more minutes, then add the milk, and mix it well.
  3. Mix 1 Tablespoon of baking soda in 1 Tablespoon of water and add it into the mixture, then add the flour, baking flour, shortning, and vanilla extract. Mix it thoroughly to complete the dough.
  4. Place the parchment paper in the steamer (brush a little oil on the paper), then pour the dough into the steamer, cover it tightly, and steam it for about 30 minutes over high heat.
  5. Remove the cake from the steamer, cut it into small pieces and serve while they are warm.
